Centuries-old culinary traditions see men and women venture out in their thung chai bamboo basket boats at the break of dawn and return daily with a bounty of fresh fish, seafood, and an incredible variety of vegetables and fruit. A cuisine as varied and unique as the country's landscape has created dishes that balance sweet and sour notes with fiery heat, and aromatic spices that linger on the palate and in the imagination. The distinct flavours of the country's terroir come together in a complex mix of Asian and classic French culinary traditions to create an altogether unmatched experience.

Vietnamese food has all the hallmarks needed for an elevated gastronomic experience, yet it is a cuisine often associated with unassuming street food. At Dzo Dzo, Vietnamese cuisine is given the attention to detail it is deserving of. Chef Ki, the culinary master who carefully curated Dzo Dzo's menu, trained in the world's top kitchens including the Ritz Carlton Hong Kong and 3 Michelin-starred Bo Innovation before setting his sights on this new adventure. His insistence on top-quality ingredients sourced for freshness and seasonality is a nod to Vietnam's bustling produce markets. While paying homage to tradition, Chef Ki is not held back by it, preferring instead to add his own unique innovations which elevate and transform even the simplest dishes into an unforgettable meal that transports and revives. With that in mind, our unofficial motto is “What comes from the heart, goes to the heart”.
